WHY DO WE FERMENT?
Probiotics play a key role in helping to build a balanced gut microbiome. Beyond probiotic supplements, fermented foods are a natural way to work probiotics into our diet, and the options are both plentiful and enjoyable.
From sauerkraut to kimchi, from kombucha to kvass, fermented foods are a nutritional powerhouse that should work their way onto our plate every day.
Fermented foods are also said to maintain the integrity of the gut lining, balance the body’s pH, serve as natural antibiotics, antivirals and antifungals, regulate immunity, control inflammation, facilitate the excretion of toxins, and increase the bio-availability of vitamins and minerals.
OUR VALUES
We believe in having as little impact on our natural environment as possible. Here is an outline of our core values:
- Supporting organic agriculture, especially small-scale farmers
- Responsible waste disposal: We compost all compostable by-products including vegetable waste, tea leaves and SCOBYs. We’re diligent about reusing and recycling.

Non-toxic cleaning: Our aim is to comply with BlueEco standards. This means cleaning naturally, without harming our vulnerable aquatic ecosystems.
- Reusing packaging materials, where possible
- Fair remuneration: We believe that the quality of living foods is a direct reflection of employee morale. Consequently, we are passionate about taking care of our employees in every respect.

OUR FOUNDER
Nicola Kafula has always had a passion for great food and a keen interest in health. She had pursued a number of careers, including music, auditing, financial management, banking and technology. After the birth of her son, Nicola became a stay-at-home mom. She began to deepen her knowledge about health and explore the potential of food as medicine. This sparked an interest in gut health and the importance of the microbiome. Nicola started up Kraut & Krunch in 2014 with the vision of bringing raw, artisanal ferments to Johannesburg.
